Best in class - Booze producers talk food - Part 3 (final)
We saved the best til last. For the final in our series on what our producers love to serve with their products we went a little further afield - to the other side of the world to be exact - to chat with Jon Hillgren - master distiller, and owner of the world's most awarded gin - Hernö from Sweden.
What is your favourite thing to eat when you’re enjoying your product?
One of my absolute favourite ways to enjoy Hernö gin is neat. I’m also a huge fan of classic cocktails. Drinking Hernö gin neat, perhaps give a quick stir over ice, it pairs perfectly with some of the classic Swedish dishes. For example with pickled herring in its many varieties.
Do you have a particular recipe you love to use?
Pickled herring comes in many varieties. A great recipe (also incorporating Hernö gin) is:
- 10 spruce shoots
- 40 ml Hernö gin
- Lemon zest
- Lingon berries
- 1 pack of herring
Mix the broth from the herring with spruce shoots, some lemon zest, lingon berries and chive. Cut the herring and add to the broth. Let it rest in the fridge for 1-2 days.
What is it about that dish that makes it go well with Hernö
For the herring, with this recipe we are using many of the ingredients also used in Hernö gin so the gin enhances the flavours of the herring. Using other recipes of pickled herring the saltiness goes very well with the floral and fresh Hernö gin.
When was the last time you sat down and enjoyed this combination?
I enjoyed herring and gin over Christmas. We are getting closer to Easter celebration and pickled herring on the table is a must in Sweden so I will enjoy it soon again.
