Sailor's Grub - Booze producers talk food - Part 1
With the Food & Wine Festival happenings around town we thought it would be great to ask some of our producers what their favourite food is to enjoy with their products.
First cab off the rank is the master behind some of the craziest Aussie craft beers - Chris Moore from Sailors Grave Brewery

What is your favourite thing to eat when you’re enjoying one of your products?
Bbq'd abalone and buttered white bread with a Sailors Grave 'Down She Gose'
What's the story behind this combo?
We live on the far East Gippsland coast and it is abalone country out here! Our extended family have dived abalone since the 1960’s and we eat it in multiple different ways, but this is our favourite.
How do you make it?
Fresh caught abalone cleaned and tenderised; sliced and marinated in white wine, lemon and salt & pepper. Grilled on a hot grill with a bit of butter just at the end (careful not to burn the butter). Served on buttered crusty white bread with a squeeze of lemon.
What makes this work well with the gose?
There is a harmony between the gose’s minerally ocean tang with umami character (from the seaweed) and the rich earthy sea flavours and umami of the abalone. The brightness and dry finish of the beer complements the richness of the abalone and the lemon notes are common to both.
